About

meh

I'm Margaret. I'm a granola-crunching, tree-hugging, dirt-worshipping vegan college student currently residing in Ithaca, New York. I live for the days when I can just be outside in the woods or riding my bike soaking up the sunshine. I am full of wanderlust and a desire to soak up information and life, and I am captivated by the western half of the North American continent.

happiness is

homemade general chow’s tofu, hummus, and pita bread. mmmm. even though i accidentally burned a tiny spot on my arm. also, who knows what possesses me to randomly cook a big batch of food on school nights, but my taste buds aren’t complaining.

in truth, the forest hears each sound, each blade of grass as it lies down. the world requires no audience, no witnesses

tomorrow’s my one year veganiversary! woohoo! wish i had time to celebrate and make a bunch of vegan food.. oh well, i just enjoyed some vegan hot chocolate and it was delicious :)

here’s to many more years of cruelty-free eating and living! namaste.

ps. oh and i FINALLY sent in my check and waiver for RAGBRAI!!! aka i’m officially riding my bike across iowa for a week this july! i’m doing it as a fundraiser for sadhana forest. want to help me raise $1000? don’t be shy, any contribution would be greatly appreciated. it’s by far the most amazing place i’ve ever been, so you should at least look into it :)

i made curried butternut squash soup yesterday for the first time! it was quite tasty.. a bit spicy for me but i think it made it better. and i substituted maple syrup for honey (not sure if that made a difference/made it better or anything). i would’ve liked it thicker but only after i put the final batch in the blender did i realize i shouldn’t have pureed the other batches so long and that would’ve fixed that. oh well. i was still happy with the way it came out! :)

she’s standing in the ashes at the end of the world, four winds blowing through her hair

figured i might try blogging again, just for kicks. but mostly to help me remember things. just for my own sake, since i know no one cares. it’s always fun for me to look back on. since i haven’t written an actual entry in several months, i’ll just try to recap some major themes of what’s been going on in recent memory.

let’s start with today. it’s the first day of classes for the spring semester. not looking forward to it really, with the exception of outdoor adventure skills (backpacking, rock climbing, and kayaking). i’m just ready to be done with school.

so winter break ended yesterday. it mainly consisted of:

  • complaining the whole 2 weeks at home about wanting to be back in ithaca
  • hanging out with nancy (including the first time i’d been to the eye in years), and zach (once)
  • too much driving, spending too much time in martin’s and in newark, delaware (although i don’t mind newark)
  • hating the weather
  • a lack of motivation to do anything because of the weather
  • a ton of great vegan food, some i made by myself but mostly with devon.. including: chocolate chip cookies, banana bread, delectable banana peanut butter chocolate chip cookie dough ice cream, bread, pesto, many delicious dinners (featuring a lot of curried/stir fried veggies, pasta, potatoes, and other wonderful deliciousness), and most recently.. fantastic, mouth-wateringly tasty deep dish PIZZA! check it:with DAIYA (my favorite!!!) and amazing homemade crust!
  • running with alexis (who made a resolution to run every day this year)
  • staying up super late, sleeping in super late, and doing nothing all day
  • scrubs and 30 rock
  • crossword puzzles
  • dance parties in devon’s living room (attendees: devon and me)
  • wishing i was somewhere warm and sunny and mountainous

yeah. other than that life has been pretty typical.. school and such. i feel like this is one of those times when you reunite with an old friend who you haven’t talked to in so long there’s so much to catch up on it’s difficult to know what to talk about. or maybe i’m just awkward.

bright eyes - four winds
